SPINACH SALAD WITH ASPARAGUS

 4 cups fresh spinach, washed and dried
 1 lb asparagus stalks, washed and trimmed
 3 tbsp "18 year-old" balsamic vinegar
 2 tbsp extra-virgin olive oil
 0.25 red onion, sliced (you want onion strings)
 1 garlic clove, minced
 0.25 tsp freshly ground pepper

Blanch the asparagus in lightly salted boiling water for approx. 3 mins. Remove from heat and refresh under cold water: drain well.

Place spinach leaves on 4 plates and place asparagus on top. In pan over medium heat, cook red onion, garlic, and pepper in olive oil for 3 mins, then add balsamic. Cook until warm. Pour warm dressing over salad. (the warm dressing just starts to wilt the spinach) It is awesome and simple.
