Spinach Salad with Asparagus

  • 4 cups fresh spinach, washed and dried
  • 1 lb asparagus stalks, washed and trimmed
  • 3 Tbsp "18 year-old" balsamic vinegar
  • 2 Tbsp extra-virgin olive oil
  • 1/4 red onion, sliced (you want onion strings)
  • 1 clove garlic, minced
  • 1/4 tsp freshly ground pepper


  1. Blanch the asparagus in lightly salted boiling water for approx. 3 mins. Remove from heat and refresh under cold water: drain well.
  2. Place spinach leaves on 4 plates and place asparagus on top. In pan over medium heat, cook red onion, garlic, and pepper in olive oil for 3 mins, then add balsamic. Cook until warm. Pour warm dressing over salad. (the warm dressing just starts to wilt the spinach) It is awesome and simple
