Asparagus Vinaigrette Salad

Ingredients

  • 1-1/4 lb fresh asparagus, cut into 2-inch pieces
  • 1-4 oz jar diced pimentos, drained
  • 1/3 cup green onions
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup cider or white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dried thyme

Directions

  1. In a saucepan, cook the asparagus in a small amount of water for 5 minutes or until crisp-tender.
  2. Rinse with cold water; drain well.
  3. Place in a bowl; add pimientos and onions.
  4. In a small bowl, whisk oil, vinegar, mustard, Worcestershire sauce, basil, salt, pepper and thyme.
  5. Pour vinaigrette over asparagus mixture and toss until evenly coated.
  6. Cover and refrigerate for at least 2 hours prior to serving.
