QUICK ORZO SALAD

 8 oz Orzo pasta
 2 tbsp extra-virgin olive oil
 1 tbsp red wine vinegar
 0.25 cup minced red onion
 0.50 cup grape tomatoes
 0.25 cup fresh basil leaves, chopped
 Salt and ground pepper

Cook orzo according to package directions. Drain and transfer to a large bowl.

Stir in olive oil, vinegar, red onion, tomatoes and basil and toss to combine. Season, to taste, with salt and pepper.
