FRENCH SALAD DRESSING

 0.33 cup good white wine vinegar or to taste
 1 tbsp fresh lemon juice
 1 tbsp good Dijon mustard
 Sea salt and pepper to taste
 1 to 2 crushed cloves of fresh garlic

Ratio of Acid to oil is 1/3 acid to 2/3 oil. Combine all the above together in a medium sized bowl and mix with a wire whisk until the salt dissolves. Then, slowly drizzle in approximately 2/3's to 1 cup of good extra virgin olive oil, wire whisking gently until fully incorporated
