  • 1/3 cup of good white wine vinegar or to taste
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp good Dijon mustard
  • Sea salt and pepper to taste
  • 1 to 2 crushed cloves of fresh garlic


  1. Ratio of Acid to oil is 1/3 acid to 2/3 oil. Combine all the above together in a medium sized bowl and mix with a wire whisk until the salt dissolves. Then, slowly drizzle in approximately 2/3's to 1 cup of good extra virgin olive oil, wire whisking gently until fully incorporated
