Creamy Feta Vinaigrette

  • 3 oz crumbled Feta cheese, preferably French
  • 2 1/2 Tbsp red wine vinegar
  • 1 Tbsp water
  • 1/2 tsp dried oregano
  • 1/4 cup 1 tsp extra-virgin olive oil
  • Kosher salt and freshly ground pepper to taste


  1. In a food processor, pulse the crumbled feta with the red wine vinegar, water, oregano, and olive oil until the vinaigrette is smooth.
  2. Season with salt and pepper.
  3. Whirring this dressing in the blender gives it a creamy consistency. If you don’t have a blender just mince the shallots, then whisk the ingredients in a medium bowl.
  4. Great with grilled vegetables or shrimp, cucumber salad, spinach salad, tomato salad, and potato salad.
