CORNISH HENS WITH SCALLION AND LIME

 9 tsp extra-virgin olive oil
 1 tsp dried oregano
 1 tsp cumin
 0.50 tsp salt
 Fresh ground black pepper
 2 Cornish hens (about 1-1/4 lb each), halved
 1 scallion including green top, chopped
 Lime wedges for serving

Heat the oven to 450°F. In a small bowl, combine 4 ½ tsp. of the oil with the oregano, cumin, 1/4 tsp. of the salt, and 1/4 tsp. pepper.

Rub the mixture over the skin of the hens and arrange them, skin-side up, on a baking sheet. Roast in the upper third of the oven until golden and cooked through, about 20 minutes.

Meanwhile, combine the remaining oil with the scallion, the remaining 1/4 tsp. salt, and 1/8 tsp. pepper. When the hens are roasted, top with the scallion and oil. Serve with lime wedges.
