Ingredients
- 1 pint cherry tomatoes, halved
- 1/4 red onion, chopped
- 1 Tbsp strawberry balsamic vinegar
- 1 Tbsp blood orange extra-virgin olive oil
- 1/4 cup chopped fresh parsley or cilantro
- 2 avocados, diced
- Pinch of sea salt
- Pinch of freshly ground pepper
Directions
- Combine tomatoes, onion, vinegar, oil and parsley or cilantro in a bowl and toss. Add avocado and toss gently. Season to taste with sea salt and pepper.
- Serve immediately or chill for later use.
